šŸ’ƒšŸ» Erin's Virtual Supper Club Cinco De Mayo Party šŸ¹

I'm hosting my very first online virtual supper club to celebrate Cinco De Mayo! The event will take place next Tuesday, 5th of May at 6pm UK time. This is a super-chilled event during which we will make EASY tostadas and mojitos together, guided by me, online via ZOOM.



You can join in on the cooking and drinks making or simply tune in for some company and a laugh. It's up to you!


If you do wish to join in on the cooking and the cocktail making, please see the simple list of ingredients below and make sure you have most of them (I know we are not able to find everything we want at the moment!).


I will send out the ZOOM details closer to the event.

Ingredients List


For the tostadas - This recipe will serve 2 people


  • 4 flour tortillas (I use the smaller 6 inch ones but if you cannot find these a 2 large flour wraps will work)

  • 1 400 gram tin of kidney beans - drained and pre-rinsed in warm water

  • 1 heaping tablespoon of ground cumin

  • Pinch of dried chili flakes

  • 1/2 teaspoon salt

  • 2 tablespoons of olive oil

  • 2 cups of good quality grated cheddar cheese


To top the tostada - You can omit anything here that you don't like here, or add your own twist


  • Sour cream or Greek yogurt

  • 1 Lime

  • About 1 cup of freshly chopped ripe tomato

  • A good handlful of finely sliced iceburg lettuce

  • 1/2 cup chopped red onion or spring onion

  • 1 ripe avocado

  • Freshly chopped coriander

  • Chili for added heat (optional but I love it!)


For the mojito - This makes 1 drink, adjust accordingly if you need to


  • The juice of one lime

  • 1 tsp granulated sugar

  • Small handful of mint leaves

  • 60 ml white rum

  • Soda water (to taste)

  • Ice

4 things to have ready BEFORE Virtual Supper Club Starts!


  1. Please have either a food processor, mortar and pestle (or you can use the back of a fork) to blend the bean mixture.

  2. Please have your oven grill set to high.

  3. Chopping board and sheet plan at the ready.

  4. Suitable glass at the ready for your mojito.
